Mix and grind these ingredients: salt, turmeric, garlic (replace with 1oz powder if needed), onion powder

Add the mix ingredients in step 1, and add achote oil. This oil can be replaced by olive oil, sesami oil, or vegetable oil.

Add sauce in step 2 to chicken and rub thoughrouly in bowl or large plastic bag. Then add beer. The lighter the better; modelo light, corona, etc. Then add the bay leafs.

Let the marinate sit on the refrigerator for at least 30 minutes. If you leave it over night, it will taste better. The longer you leave it the better.

On a foil bin, put the whole chicken with all the marinated seasoning in the grill at 350 degrees F for about 45 minutes. This needs to boil and cook the chicken at about 90%.

Take the chicken out of the foil bin and place it at the top of the grill floor. Set the grill to 375-F and leave it there for about 45 minutes or until you get the crisp on the skin you want.
